I am now 38 weeks pregnant and when other mums-to-be might go into a mad cleaning frenzy, I have been cooking! Yesterday I made shortbread and coconut macaroons for the first time – both very cheap and delicious. I also cooked roast pork with a rosemary, garlic and bay leaf crust. I really fancy making chocolate truffles too. These are a bit more indulgent but I figure I should be treating myself right now!
Anyway, apart from passing the time reading cookbooks and baking, here is my meal plan for this week. I am keeping it fairly simple with easy to use ingredients so if I do suddenly go into labour we can still rustle up some quick meals.
Monday: Chicken parmigana
Tuesday: Sausage casserole
Wednesday: Homemade pizzas
Thursday: Baked potatoes
Friday: Sausage, mash and onion gravy
Sunday: Slow cooked beef stew
